Carbonic maceration is a special winemaking method in which whole, undamaged grapes ferment in a closed tank under a CO₂ atmosphere – without prior crushing. Fermentation begins within the grape cells themselves.
The result: very fruity, light-bodied wines with notes of cherry, strawberry, banana, or violet. These wines are usually low in tannins and very easy to drink. -
Serving suggestion: always serve slightly chilled (12–14°C) – perfect for picnics, empanadas, light pasta or tapas evenings.

A vibrant and playful expression of Tannat from the high-altitude vineyards of Tarija. In the glass it shows a bright ruby-purple color, with an aromatic nose full of fresh red berries, crushed cherries, wild strawberries, and floral hints of violet, alongside subtle notes reminiscent of banana and red fruit candy. On the palate it is juicy, silky, and fruit-driven, with soft tannins and lively acidity. Flavours of cherry, raspberry, and red plum lead to a fresh, smooth finish that highlights the youthful and approachable side of Bolivia’s flagship grape.
Jardín Oculto
Founded in 2019, Jardín Oculto is a small winery that celebrates Bolivian heritage by producing wines with minimal intervention, made exclusively from Criolla grape varieties and Vischoqueña, a grape variety native to Bolivia and found nowhere else in the world.
Located in the Cinti Valley at an altitude of 2,300 meters above sea level, the vines are very old, some estimated to be 200 years old, entwined around Molle and Chañar trees that climb six meters high. This form of cultivation, while the most natural, is a rarity in the world of winemaking, making these vineyards and their wines true treasures.
